What is the way to do passports if you are taking your biracial Korean/American child with 2 passports and dual citizenship home to meet family? Which passport gets stamped where?

Korean in Korea, home country in home country, the easier of the two wherever else you may go.
You do not need to use the same passport at both ends.

Exactly.

Leaving / entering Korea = Korean passport.
Entering / leaving the U.S. = U.S. Passport.

Tried and tested.

Ditto the others OP.

Did this with my daughter and will be travelling again this summer. The great thing is that as an F-5 holder I can go through the same line as my wife and daughter on return to ROK.

You can do that on an F-2 or a tourist visa for that matter.

When processing immigration, families traveling together should process together. My wife usually processes the foreigner line with us when entering Korea because the line is shorter.

She processes the U.S. line with us in the States for the same reason...

My wife doesn't have US citizenship or a green card, can she still go through customs with me in the States? (sorry to hijack, though I think OP's answer has been answered)

Yes. My wife process the U.S. line with us and only holds a Korean passport.
