I may be coming back to korea, but I'm not sure yet. Would a UK bought Samsung Galaxy S be able to be transferred onto a korean pay monthly system or something similar? |

I'd give it a tentative "yes" although you may not get all the functionality.
I have a Korean purchased Galaxy S and I recently went to the USA and put a local SIM card into it. It worked, but the 4G stuff was crap. Wi-Fi worked ok, but otherwise it was far too slow and the phone company said the Korean version was slightly different from the US model and wouldn't properly accept the right network bits. Leads me to believe you might be
in the same boat with your "slightly different" UK hardware |

What provider did you go with when you went back to the states? I'm pretty sure AT&T has the same 3G network as Korea's 3G through SK. |

AT&T is not and never will be the same as SK. They may share similar technologies, which I suspect is what you mean.
I used t-mobile. |
