I want to stay in Korea maybe up to a week after my E-2 expires. Do I just go to the immigration office in my town and request it?

Short term stays (up to 30 days) are free.
You will need to show your exit ticket to get it (your extension will be until the date of the ticket).
You can do it at your local Kimmi office or on their website.
