My boss is planning to buy my plane ticket home for July 1st. I will not be ready to leave on the 1st and have been planning to spend a few days in Seoul with my fiance after my contract ends. My original contract ending date was May 31st but I extended for 1 month with my school. I planned to file for a temporary extension of stay with immigration by just showing my plane ticket and passport. I told my boss this and after calling immigration, he said that immigration will not extend my visa again because it's already been extended once. As that was through work, I don't know why it would make a difference. I just want a few extra days before I have to leave which will have nothing to do with the school. Does anyone know what I can do in this situation? I can't just work all next week, then just leave my fiance on the 1st.

The tourist extension has nothing to do with work and has nothing to do with any prior WORK extension.

If your boss already used the 30 day free extension (for your extra month of work) rather than properly process the work extension for your E2 then you are screwed.

Now that you mention it, I am suspicious that that may be exactly what he did. I am thinking about going to immigration myself to find out which extension was used. If he did use the 30 day free extension that is supposed to be for my use and immigration finds out I have been working on it, who would get in trouble? Me, the school, or both? I fully expected that a work extension would be processed, so if I have been working when I wasn't supposed to, it was without my knowledge.

You and the school will both be in trouble; however, the types of trouble are different for you both. For the school, they may face a fine. You can face both a fine and detention until the fine is paid, following which you may get deported immediately and given a "Do Not Return" order. Your boss will probably not pay the fine on your behalf.

"It was without my knowledge" will not fly at the Immigration inquiry. It is your responsibility to ensure that you are within the laws pertaining to your visa. Of course, that's a silly requirement since not everyone coming here on a visa is a Korean lawyer, but that's the way it is.

If there's nothing in your passport or on your ARC, then nothing was processed and you are in an overstay status.

I talked to my boss again and told him that I wanted to stay for tourism purposes after my visa expires. Apparently that was not the kind of extension that he checked on the first time. He said that he called immigration again and they said that they will only give any 30 day extension one time and there is no way I can extend my visa again for a few days. Is this right? I think what I got was a general 30 day extension that was valid for working. So, am I just out of luck? Is it possible that I can still extend for a few days?
