just want to make sure I am on the right track with the E2 visa renewal. My visa doesn't expire until end of August and I am heading to Canada for a month, but will be back 2 weeks before my visa expires. So this is what I think I do:

1. Get a notarized copy of my university degree and a sealed copy of my transcripts.
2. Take my original degree, notarized copy and RCMP CBC (along with ID) to the Korean Embassy in Toronto for then to authorize and stamp my documents. Is there also an interview?
3. Then once I am back in Korea, I take these now 'authorized' documents along with my contract and papers from school to Immigration place in Seoul.

Am I correct? Is this what I do? If a Canadian has been through it successfully, I would appreciate your feedback. Does anyone know how difficult it is to get an appointment at the Korean consulate in Toronto? Is there a long wait time?

That would suffice and would be 4 months before actually required (saving you the hassle of doing it in the new year while you are abroad).

Your syopsis is also correct (original RCMP check and notarized (photo)copy of your degree; both taken to the consulate and certified.

You do not need an interview. You will need ID (and a photo copy of your PASSPORT) when you go to the consulate.

They may also ask for a sealed transcript to verify your degree before they certify the copy.
