How does Taiwan, China, and Mongolia compare to Korea when it comes to job opportunities, pay, benefits, and especially visa requirements for immigration?

taiwan was easy as hell. I went to the consulate in LA. showed them I had 2k or more U S dollars in the bank. They gave me a 60 day tourist visa on the spot. i wen there and found a job in 3 weeks and the visa was transfered to a work visa with no hassles. No CBC was necassary

The remuneration package (pay + benefits (salary, airfare, housing, etc)) in Korea is the best in Asia (probably still the best in the world) for a green-as-grass, wet-behind-the-ears newbie (outside of the JET program).

Taiwan is a close 2nd (pay is good but usually no benefits).

China is a rapidly climbing 3rd (usually airfare and housing but pay is still a bit low). Salaries have just about tripled in the last few years and would be expected to climb due to excessive demand for teachers.

Mongolia is at the bottom of those 4.

In terms of visa application process:
None of them are particularly daunting.

Korea is a bit of a pain with the added requirement of getting an apostille on your documents (CBC and copy of your degree) but if you can't deal with that then you won't do well abroad either.
