Foods in the freezer will not deteriorate in any discernible way in regards to health issues. The main issue that comes from freezing goods is freezer burn, which is the result of water slowly migrating out of the food. You will often notice that on foods that are partially freezer burned that it is always the parts exposed to air which have the most freezer burn, and that freezer burn is frequently accompanied by frost accumulation, even in sealed containers.

The best way to prevent (delay) freezer burn is to not have any air in your packaged food. This is often impossible, but methods such as a vacuum appliance or even pushing out as much air as you can will go a long way to keeping frozen foods good for longer periods of time.

Some foods can be frozen in ways that you wouldn't expect. Bread, for example, can be kept for around a month with minimal detriment to quality (its actually better then the refrigerator). Sauces can be stored for a long time; if you make extra sauce it is very easy to freeze the rest. A neat trick is to freeze the sauce in ice cube trays so that you can bag the sauce cubes and portion them out as needed. Other foods, like cheese do quite well in the freezer if not forgotten about and packed with minimal air contact.
