I will be quitting my job before the end of the contract. After the company cancels my visa, how long do I have till I have to leave?
And if I need to apply for an extension of stay for a short time, do I need to apply for it before the company cancels my visa? or, I can do it at the same time of cancellation? |

You have 14 days from your last date of employment to report the change to immigration.
They will then give you a total of 30 days from your last date of employment to find a new job and transfer or to leave Korea.

What if you go in on the 29th day, can you apply for a tourist visa (maybe not 90 days, relative to USA, but more like 30 more days)? Could you theoretically stay 59 days past? |

IF you go in on day 29 you have violated immigration law (report required within 14 days) and would be subject to penalty and an exit order (hopefully without detention).(IN THEORY)
In practice, as long as no-one has reported the termination of employment you can, (at some minor risk of discovery), stay till the expiration of your ARC.

This is kind of related to a question I have about a letter of release.
Does this mean if I bring an LOR to immigration, I then have 30 days to find a new employer to transfer my visa to? |

No, I meant you go and they give you 30 days after you quit. Then, on the 30th day you have to leave right? What if you go on the 29th day after they have given you 30 days to leave and ask to change to a tourist visa? Can you then get 59? Your answer may still be similar but less "illegal". |
