This is my first time applying for an E2 visa, and I just wanted to make sure-
Korean immigration wants an apostille photocopy of my degree, and not the original degree with an apostille? |

Correct. they want the apostille on a certified true copy of your degree and NOT the original.
The reason they do not want your original is that they WILL KEEP whatever you send them so if you use your original it will be gone forever.

I have a question hopefully someone can answer. To get my e2 renewed next year, I've been told I need to submit the apostilled copy of my diploma.
I'm American, so do I need to:
1) Go to the embassy and get a copy notarized
2) Mail off the copy with the notary's form and get it apostilled by the department of state (or my state's secretary of state)
2a) When I send it off to be apostilled, should I include the original diploma, or can I just keep it?
?????

I'm changing jobs, the new place's admin department asked me to drop off my original MA certificate so they could send it to the embassy in Seoul..... Have you ever heard of this kind of thing before?
I gave it to them because if it gets lost in any way, they are paying for another one.
