One of my students made kimchi for her family last week, and she brought me a big container of it to take home.
I don't mind kimchi, but I'm certainly not going to be having it at every meal, so I'm just curious how long I can expect it to stay okay for. I know most Koreans have a kimchi fridge, but I plan on just throwing mine in a regular fridge.
I know I could ask a Korean, but their kimchi obsession is borderline neurotic, and so I'm not sure I'd get an accurate answer.

I'd imagine it depends on what kind of kimchi we're talking about, although that's just a guess.

A Kimchi Fridge is just a fridge to store Kimchi since Koreans generally store a lot more Kimchi than just one tube. An ingenious way for Samsung and LG to sell more refrigerators.

I'd say within 6 months would be typical and best for a non-Korean to handle. Otherwise it gets really really sour. Anyways, the non-water/soupy kimchis can last months to a couple of years. And often Koreans will use really old kimchi in their stews.

Im going to tell u how long it can truly stay for, and hope it doesnt disgust u lol

Kimchi if made correctly can stay for YEARS easily. Even kimchi with mold on it can be eaten, all you do is wash the mold off. When it is really old its best used in kimchi stews and things of that nature. Kimchi will NOT get sour as it gets older if properly stored. My mother makes about 50 - 100 gallons of kimchi every year and she has jars from from 2 or 3 years ago. the process of letting the cabbage sit in salt water and the whole process lets it last for YEARS upon years lol its a natural miracle of food lol
