No, your outlook is simple.

I want to eat fish. It doesn't come without the bones. I don't eat it.

That doesn't equal aproblem solved. It equals - I can't enjoy the fish I want, as the chef didn't bother to fillet it.

The fish is filleted, leaving me to enjoy it without tearing into tiny pieces = problem solved.

Actually I can now tear out the spine and all the rest in a few strokes of the old chopsticks, so it's a moot point for me.

Funilly enough I never see Koreans do this, they still pick tiny pieces off etc and go around the bones, so to speak. (Ths doesn't mean I hate them, okay.)

The 4 top fishes eaten in Korea and I could de-bone all of them with my chopsticks in under 3 minutes.

One reason to leave the bones and shells in the meal is for flavor. It can be irritating removing them however!

Still, this is not a sign of a lack of food sophistication, it is just a cooking preference in my opinion.

In all fairness, I'm not going to discuss how I don't like Gravlax on a Korean forum.

As for the bones, I just pick them out. I've been using chopsticks since middle school, so it's easy. Do I enjoy it? Not as much as if I didn't have to pick them out. At home, though I just do this:

Yout are trying to convionce us that leaving the tiny spine and skeleton in grilled ssang song mulgogi or oddonga or trout changes the flavour? It doesn't.

I tried and it does...I was actually surprised when my wife did that and told me after! Laughing

Oh and not trying to convince anyone since this is clearly a food preference. What I like and what you like are quite different things and I did not (as you should have noticed) question what you said, I just discussed the topic.

You find bones and fish spines irritating (apparently to a HIGH degree considering your "it takes me 25 minutes just to..." comment) and I respect that.

I personally find a taste difference when the bones are removed prior to cooking and personally do not find it bothersome to remove the spine and bones from a fish (I was shown how to do this easily by a friend years ago...before that the fish ended up being a mangled mess on my plate!).

To each his or her own anyway. I am not looking to argue food here.

Oh and in my family, people eat the cartilage off the bones when we eat chicken. Always loved that crunchy part. I did that with my in-laws in Korea once and you should have seen their faces. It was priceless.

I seldom filet any fish I catch, unless its really large. I don't mind the bones.

However I usually do remove the skin/scales, head and intestines. The head removal reduces the size of the pan needed. I know that Koreans pickle pollock intestines. They also cook whole fish with the intestines "in situ".
That's not to my enjoyment.

Then again, I don't like chicken cartlidge.
Chicken feet do make good stock though.
