With my letter of release in my hand, I am applying to new positions. I am ending my contract fairly early, a little over 2 months in. Would it be advantageous at all to include my current job that I'm quitting in my resume when applying for new jobs?

Will they try and screw you over? Will prospective employers not hire you if you put it on a resume and they start asking tough questions? That's what you need to ask yourself. If it's "yes" to either question, then don't waste your time.

The advantage you have with a letter of release is that you can change jobs without the cost or bother of a visa run. You are already in Korea. You are available now.

How can you explain having a letter of release if you don't list the job you were released from? This would be quite a red flag to an employer that you have something to hide.
