Prepare a lesson. Setup camera. Record. Copy to CD/DVD-R.
Asking for video is not common, but expect some high end places to ask.
Consider having the video start from a certain point. Rather then spend 5 min just starting doing review. Do a full lesson and give the best part. Careful of formating the video. Try to format for a complete computer newb. If the have to install codecs or sign into a special site or download a huge file then it will just make problems.
Was your interview in person? If not, the may be asking for a video so they can weed out the undesirables aka ugo, people with funny accents, fat, or what ever.
