Anyone else feel the big chains were behind this investigation?

Collusion between a TV station and its advertisers to stamp out the competition? No, it couldn't be. The local media and corporations are too ethical for that to ever happen.

I've known this since I first tried Pizza School. That being said, for the price it actually isn't that bad. They just shouldn't have lied about it.

Hyundai Card M gives me 50% off on Papa John's pizzas, 24/7. That $12 pizza is now $6, same price as a fake cheese pizza for the same size pizza, AND you don't have to worry about the cheese. And they deliver for free. And Hyundai seems desperate as they've been approving foreigners for their credit cards as of lately Very Happy

But does Papa John's actually have any pizzas for $12?

Since it's only the cheese crust and not even the cheese topping, I don't really think it's such a big problem. Pizza Maru was supposedly in the same situation as Pizza School, but I prefer both of them to Papa John's/Pizza Hut.

Yeah, I worked for one of their competitors here in Korea, and the issue of cheese costs seemed to be what everyone in the office was focused on.

How can places like that use actual cheese and still keep costs so low??

Well, I was talking with a Korean-American (Kyopo) friend who has been here for many years, and he said that many years ago it wasn't easy to get decent pizza because of the cost of cheese. I have eaten cheap pizza in Korea, and it didn't taste so bad. I'd rather eat it than spend a fortune on Pappa John's. Fortunately, in my city, I found a pizza joint that serves pizza that reminds me of pizza back in North America.

1 kilo bag of mozzarella from a supplier of pretty good quality which most restaurants here use is 10.000 won.

a pizza is probably 100grams of cheese
so that's 1000 won per pizza just from the cheese.

Good post, but to address these numbers and help your calculations..

A 12 inch pizza usually has 6 inches of cheese in the industry. That's about 170 grams.

As coralreefer said, cheese is a MASSIVE part of food cost. Even buying in bulk, the cost is still pretty significant. In the US a few years back the price of milk effectively doubled and it was a major burden.

One thing I notice at Pizza School is that there make line has no cheese catcher and I didn't notice them using any scales. Instead it was the lady very carefully and slowly sprinkling cheese. It's weird "fast food" here isn't fast and people seem overly cautious and decorative. Cheesing a pizza should take about literally 1 second. With pre-stretched dough you could make a sausage pizza in about 5 seconds About 15-30 seconds if you have to stretch the dough. Pepperoni is actually one of the slowest pizzas to make.

I think its because the franchises here are basically mom and pop operations. There isn't any special training involved in owning that franchise.
