Hello,am bringing my phone to Korea - it worked in the UK, US, EU and Japan, so I'm assuming that it will work in Korea too.

I will also get a pay-as-you-go sim card (to be topped up once finished). Which company offers the best rate for domestic calls (Korea)?

Here are the basic pre-pay rates for the 3 Korean providers.

SK: 4.5 won/second, SMS 22 won
KT: 4.8 won/second, SMS 22 won
LG: 4.9 won/second, SMS 20 won

SK has the best call rate, but LG may be better if you're a heavy texter. There's no reason at all to choose KT.

sk shops will only refill pre-pays mon-fri 9am-6pm
lg do it longer hours on weekdays, and also on sat, but not sun
can't remember for kt, but they wouldn't set-up a new pre-pay sim for me at 7pm on a weekday, while LG would.

ridiculous, but 'pre-pay discrimination' ^-^ is what it is
it's not call rates, but is something to bear in mind
phone companies in korea have the second laziest computers in the world -_-

what documents do I need to bring to buy a sim card? Will my passport suffice?

I bet there are a few places in Itaewon that won't ask for any ID. Most others will ask for an ARC but you might get away with a Student Visa + Uni ID Card. Depends on the shop.
My friend is attending Yonsei at the moment and got a phone and bank account sorted within a week, but with help from her KLI adviser.

do you know how much it costs to send an mms? I have a KT phone (yes, cuz SK stores are too far from where I live and it's hard to drag a Korean speaker there with me) and apparently it doesn't take more than 90 characters...ANy SMS exceeding that limit automatically gets sent as an MMS.
