Decided to extend my time in Korea and it is now CRUNCH time for me in terms of obtaining my FBI CRC. Any help would be appreciated.
- For these forms--do I use my address in Korea or permanent address back home?

Also regarding the Authentications Cover Letter, is there a standardized "purpose" I need to write? Or would "I intend to use this document in order to fulfill South Korean work visa requirements" be fine?
Overall process:
- submit all required documents to CJIS in West Virginia (also asking to provide FBI seal/signature)
- wait
- receive the results in Korea (where I am now)
THEN
- send those results out of the Dept of Justice for authentication/apostille
- wait
- receive
- finished
Is my understanding of the entire process correct?

I don't think the address you put on those forms really matters unless there is some sort of problem.
I used my permanent US address on both forms. In both cases, I had also included a self-addressed prepaid FedEx mailer with a different address. Everything made it to me just fine.
Your stated purpose for the FBI cover letter is fine.
You've got the process down right as well. There is the possibility to expedite the apostille process for a fee with a special service. I won't recommend any because I haven't used any.
