My boss basically told me I can choose whatever books/whichever subjects I want for the summer intensive program. I'll have 16 sessons (total of 16 hours) with ele-mid students. Any recommendation on books? It can be reading, writing, debating, or whatever. Thanks in advance.

Kids or adults? I'm assuming kids.

Forget debates and speeches - how often do you have a debate or give a speech in English. They're very formal registers of English focussing on long spoken turns with no interaction. Pick some fun topics you think they'll like, then think of a fun task they can do together in groups. Think about what kind of vocabulary or grammar they'll need to do the task, then plan some activities to teach them that. Set with introducing the topic, teach them the vocab and grammar they'll need, then set the task.

I wouldn't bother with a textbook for a 16 hour course.
