I met someone recently who told me that it is possible to quit your current job as an ESL teacher and then apply for a new one without having to deal with the new slew of documents needed the first time around. I wanted to ask more people because I've never heard of this being the case.

Pretty much if you can get a "Letter of Release" from you current employer you can transfer. Getting the LOR is hard when you are abandoning or leaving an employer. If on bad terms expect not to get it.

Employers are not obligated by law to provide a letter of release. Maybe you can negotiate for the release ala forgo some pay or pay back recruiter fee, wait till they get a new teacher, and so on.
