There are a lot of vitamins that remain in the juice, Declan. Not all of them, of course, but enough to make it more than just simple sugars. You're right about the fiber, though.

The leftover veggies make for a great pasta sauce, though, if you combine it with some olive oil and crushed garlic and herbs and saute it with some noodles.

For me, it's not so much "juice vs. fresh veggies" as it is "store-bought concentrated juice vs. fresh juice." I won't abstain from juice altogether because it is delicious, but fresh juice is definitely healthier than processed juice.

For us the decision was simple. It was either juicing or letting all the fruit people give us go to waste.
