Just picked up my RCMP CRC. They have it to me in a sealed envelope. I plan on getting it notarized at the Embassy in Korea (Flying out today). I am wondering if I can open the letter or if its needs to remain in a sealed envelope until I give it to the embassy in Korea to be notarized?

The embassy doesn't notarized it.
You get it notarized at a notary as a true, original document (affidavit of authenticity).
Take that along with the CRC to the embassy and they then certify it for use in Korea.
You need to take it out of the envelope.
You need to do the same type of thing with your degree (but instead of an affidavit of authenticity you need to get a certified true copy made then have than certified for use in Korea by the Korean embassy/consulate.
I hope your employer is paying for your airfare AND your visa run to Japan.
Remember that it is illegal to work on a tourist stamp.
The airline may demand that you show proof of onward or return passage before they let you board the flight from Canada to Korea.

I actually have an F6 visa. I have been in, but not teaching in, Korea for a while. I need this for the MOE. My future employer told me to pick one up from the RCMP when I was home visiting this summer. They told me to bring it with me to Korea and that the Canadian Embassy could Notarize it for me. I also did the name check only (not fingerprints) because they told me that would good enough for the MOE.
Does this sound right? |

The documents for the MOE need to be the same as documents for an E2.
Yes, an over-the-counter check from the RCMP is fine.
You can get it notarized in Canada ($? varies) and certified by the Korean embassy/consulate ($4) for your region in Canada OR get it done in Korea at the Canadian Embassy (54k won - affidavit of authenticity).
