Was wondering what that benefits and drawbacks were for the E1 visa over the E2 visa? Search engine and hikorea weren't much help.

E1 = visiting professor (not just a language teacher - could be any subject).
- usually requires proof of post graduate credentials (MA/MS/M.Phil/ABD/PhD/etc.) and experience.

E2 = teacher of foreign languages (only requires an undergraduate degree (BA., B.Sc., BFA, etc.)

Any other benefits? Wondering if I'm allowed to work at a second uni without my school's permission?

Nope, both visas are sponsored. Check your contract with your Uni. Working a second job is often a contract breaker and you can be fired.
