I was wondering if anyone has ever asked any of their school teachers (not just co-teacher, but other teacher's you have worked with during english classes) for a reference letter (for future use)?

Is this considered a good idea (insurance) or should I only ask for a letter of reference (or recommendation letter) from my CT and Principal/VP?

A couple teacher's I worked with really well over a couple years recently left our school to start a new contract elsewhere. I have their contact info and was thinking about contacting them to ask for a letter of recommendation (for future use when/if I apply to another job).

Since the turnover rate of korean teachers at my school is very fast, I wanted to try and ask one of my past teachers rather than asking a new teacher who has only known me for a couple months.

Korean teachers are a fickle bunch. I was offered a letter of recommendation, then screwed later when I asked for it.

Definitely, definitely get a recommendation letter (not a reference letter) from a CT or VP/Principal if you can.

Not sure if it matters how long they've worked with you. Most of what is written there is BS anyway.
