Potential employer contacting current employer, problems?

What I mean is....

I am hoping to find a new position, but if I'm unlucky with that then I'd like to re-sign with my current hagwon. My concern is if my new potential employer contacts my boss, then my current boss will begin searching for someone to fill my spot. So, if I'm not lucky enough to find a new position that I want, then I'm stuck with nothing.

I don't think it would be a good idea to leave my current job off my resume. And I assume any potential employer would want to contact my current school. Any way around this?

I'm a few months from the end of my contract. Obviously, if I find a new job, I would give my current boss adequate heads up so he has enough time to search for a new teacher.

Always the dilemma. You don't want to burn your bridge before you have a new offer in hand. (the bird in the hand is worth 2 in the bush)

Leave it off = no.

Leave off the contact information (phone number) = yes.
Give a co-worker's (that you trust) name and number if you are asked to provide a reference.

^^. This. I just quoted this to myself today. I was trying to figure out this scenario for myself. My boss would be so upset if someone called and inquired about me. Especially since he already has plans for me to stay.
