I was in korea for many years and will return for a visit with my Thai gf.

She seems to think she doesnt need a visa but does need to show a return ticket and hotel reservation.

Anyone have any advice?

Tell her to check the website of the South Korean embassy in Bangkok. The contact information (phone, E-mail) are on the main page.

On that site, I found this nifty list of visa exemptions. Thai citizens are on the list for 90-day visa exemption.

Thai nationals are permitted a 90-day entry on arrival in Korea provided they meet the requirements for visa-free entry. (return ticket and hotel booking or other accommodation address if staying with a friend and MAY be asked for proof of funds (credit card, bank statement) to pay for their stay without "working").

She MAY face some extra scrutiny at immigration as a single, Thai girl.
If she is traveling WITH you and you go through immigration together then mostly it will be a rubber stamp entry provided YOU meet the requirements for your entry (valid ARC or exit ticket and hotel booking).

Of the number of times my Thai GF came to visit, it was mostly no problem. It's important that she have your contact info as twice she was taken aside for extra questioning and each time they called me. I was in the arrivals area, and they just confirmed the story. Although, the first time the immigration official was quite rude, and let me know they had to verify the story, because they didn't want Thai people coming to the country. I had to bite my tongue. They should pass that info on to the Korean Tourism Board so they can take down the posters promoting Korea in various subways stations and malls in Bangkok.

As the OP, if anyone knows of a specific office I can call to find out for sure, it would be appreciated.

I'm sure you can call the Thai Embassy here or your GF can call the Korean Embassy down there if you need the assurance. However, my GF came here probably a dozen times. They get three months on arrival.

My post has the specific office for her to call: the Korean embassy's consular section in Thailand.

I just spoke with the Korean Embassy and they told me everything depends on the immigration officer and that he doesnt need to justify anything.

So I will escort her to Korea.

EVERYTHING depends on the whim of the immigration person at the time. Two people can meet the EXACT same requirements and the immigration person for whatever reason lets one continue on in and turns away the next person!
I'd have pointed out to the immigration person...if you/koreans don't want Thai people coming to korea...why post ads in Thailand then?
