See what it is that they need. I'm going to assume that this is a "conversation" class and that they expect you to be a model speaker with some actual instruction involved.
If this is the case, it might be useful to check which contexts they will (if they will) use spoken English in professionally (i.e., presentations, conference calls, etc...).

Writing Guidelines for Engineering and Science Students - Could be useful for writing exercises. (http://www.writing.eng.vt.edu/)
Not much to go on, but it's a start. Also, you could google "ESL + Engineering" and/or "Engineer English"
