The best way to improve your french is to be in an environment where you're forced to use it. Intensive study is good as long as you're serious about it, but once you're feeling a bit more comfortable definately try working in montreal. I don't know about Chicoutimi though...you might want to look into programs in Quebec city. Still very French but maybe a little more enjoyable than Chicoutimi, the accent's nicer too.
If anyone's looking to practice lemme know, my roomate and I are both from Montreal and wanting to keep our french up to par so we can work when we get home.

Are you planning on taking some lessons in Newfoundland,too? There are lots of francophones there so I'm sure there are classes available, and some of them may even be free.

I took a summer intensive program in Trois Rivieres and it was great. Smaller places don't have as many sites or things to do, but if you're only doing 5 weeks, it's a lot better/more productive than going to a bigger city. I've heard good things about the Chicoutimi program from friends. They really enjoyed their homestay (I stayed in a dorm in Trois-Rivieres.)
