How does a kimchee refrigerator vary from a regular one? Do many K's have the two kinds in the house? |

If you can afford it, you MUST have a kimchi freezer or else you are not a true Korean (or Korean wannabe).
I think it's kind of like a jewelry box. You could just as easily stuff your jewels in the drawer. (That sounded painful.) But, you don't.
Jewelry goes in a jewelry box.
Kimchi goes in a kimchi freezer.
How's that for an answer? The wife says that things stay fresher and stuff doesn't get as stinky as fast in a kimchi freezer. Ah, whatever. |

One of my students is an engineer for a company that makes kimchee fridges.
He says that in a normal fridge, the temperature fluctuates, partly because you open the door often, partly because the temp you set it to will really only keep your fridge around that temp within a range of a few degrees. Because of this, the quality/taste of certain foods, especially kimchee, decreases over time after being subject to the fluctuations.
A kimchee fridge has a very slight fluctuation in temperature, much less than a normal fridge, so the taste of the kimchi doesn't change as much over time. Since people sometimes keep kimchi for a long time, the difference in taste is quite noticable (so says my student). |

Also, those green gel air fresheners in the plastic containers really take the kimchi smell out of your fridge. You have to use 2 or 3 at the same time and remove the lid, though.
I don't know why I know so much about this. I hate kimchi. |

Heathens! The only proper way to store your kimchi is to put it in a clay jar and bury it. |

I definitely agree with burying it - preferably next to the guy in the 'canned after 11 months' thread. Putting them both in Japan would be a great idea, but I'm certain that Japan has laws against dumping toxic waste. |
