My Korean wife assures me they're not plastic, but some kind of processed starch
from potatoes or goguma. Invented because the wooden ones end up in the food trash
and eventually choke pigs. Shocked

It is starch. Keep one in your mouth for more than 15 seconds, and you'll see. If that grosses you out, try dropping one in a glass of water. Add a few drops of iodine. The water will turn blue, eventually.
