Ok...what utility would be good to overclock the core speed of my video card? Any suggestions?

Depends what type of card nvidia or ATI.

Rage3d.com has a tool for it.

Nvidia cards just need coolbits enabled (simple registry patch) or You could get nvtune or nvtray guru3d.com

it is as long as you stay within range (range can be found on the repsective manufacturers website). EX. nvidia geforce 6600 @ 350MHZ can be overclocked up to 436 without trouble. Above this and you begin to experience difficulties. I would say 425 for this would be safe.

I just did this the other night with my 6600GT using the overclocking program bundled with the card software. I didn't notice a blind bit of difference....

Not even in temperature? Do you have temp sensors in your pc?

Well, I'm not sure about that. I do know how to see the temp of my card from the nVidia control panel but that would be when the card is idling. How do I see the temp of the card during an intense session of Doom 3? Just quit and look at it quickly before it cools?

I don't know, I have a hardware thingy that regulates fan speed and displays 3 temps- it's currently cpu, hdd, and case. My video card is already an overclocked version so I'm not about to fiddle with it.

I got a 6600. I didn't notice a difference when I overclocked mine,too.

By the way, give Quake 4 a try. It's everything I wanted Doom 3 to be.
