I have a BA and an MA, should I get both notarized or just the MA? Will employers want to see both diplomas or just the MA? Any ideas or experiences with this?

What sort of job are you going for? Uni, hagwon, public school?

To get your visa: your BACHELOR'S degree.

Don't assume that a graduate degree could be substituted simply because it's a higher degree.

Provide what is requested, no more no less.

Your employer is interested in your grad degree, not immigration.

ok, so BA degree and sealed transcripts for Visa. Employer may be interested in MA etc. If employer is interested in MA, in what capacity is proof needed? Notarized MA degree?

I'd get them both notarized + transcripts just in case you fall into a great uni job possibility--the kind with many months vacation every year.
