If each of the 2 schools I'm applying to want an original diploma at application, how do I handle that?

ONLY the school which you choose to work for needs a notarized copy of your diploma, don't send the original, to take to immigration to get your visa.

If you are going to work at both places, one school can sponsor your visa and you can get then add the other school to your ARC later.

You need only to provide the original or notarized facsimile to the school who hires you. They need it to complete the visa paperwork.
