Yes, it's that time of year again, when it's too freakin' hot and humid to cook. So it's time to talk about salads and salad dressings.

I didn't set out to buy an air con. In fact, I specifically told my friend JH I wanted a dehumidifier--something portable since I will probably be moving in a couple of weeks. He said he'd talk to his brother-in-law the Winnis man and see what kind of deal he could make me. Naturally, when he called back he said his BIL was making some calls and to be sure and be home by 1:30 on Monday. I was. And in they came with an air con. BIL decided I didn't need a dehumidifier since the rainy season is over. I needed an air con. They brought one that is good enough to cool my bedroom and dehumidify the rest of the apartment. This is what happens when two ajosshis get between you and your goal, but for W190,000, who am I to complain? And yes, it is bolted into the wall and is not portable, but JH swears the 'express' movers can load it up and re-install it wherever I move.

How does this relate to salad? Well...when I got home today and was munching my rabbit food, I was mourning the lack of croutons. Then it dawned on me...I have an air con. I can turn on the oven if I want to. So I checked my stale bread/frozen heel supply and EUREKA! I had more than enough to make up a batch. So I spent the afternoon steeping my olive oil in garlic and drying out the bread. While that was going on, I spent my time searching for new salad dressings and found about a dozen new ones on chef.com that I can make here at home. The most intriguing one is 'mustard and walnuts'. Sounds tasty to me.

It seemed like a good opportunity to ask the cooks in the crowd if they have any tried and true (Korean friendly) salad/salad dressing recipes they want to share.

One of my favs is:

Mandarin Salad

1/4 c of slivered almonds
1 T + 1 t of sugar

1/2 head of lettuce (or the equivalent of salad greens)
2 stalks of celery
2 green onions
an 11 oz. can of mandarin oranges (or any combo of fresh fruit--as cold as possible)

1/4 c oil
2 T sugar
2 T vinegar
1 T parsley
1/2 t salt
dash of pepper
several dashes of Tobasco sauce

1. Put the almonds and sugar in a skillet and heat just until the sugar melts. Be careful not to burn it. Turn it out to cool. Break up into pieces.

2. Make the salad.

3. Mix the dressing ingredients in a jar, shake and refrigerate until you are ready to eat.

4. Drain the mandarins and/or other fruit and put on top of the salad greens. Pour the dressing over it and sprinkle with the sugared almonds.

The Tobasco really goes well with the fruit and sugared almonds. (I usually skip the almonds because it's easy to burn the sugar.)

Just so you know, the Walnut Mustard Dressing is pretty darn good. Pretty zippy.

Thai Mango Salad

2 Limes
1 tbsp soya/fish sauce
1 tbsp gradulated sugar
1 small jalapeno/hot pepper seeded and minced
2 tbsp peanut oil
salt & pepper to taste

2 ripe but firm mangos
2 sweet peppers--red and yellow
1 Medium carrot, coarsely grated
2 green onions

1/2 cup of finely chopped mint or coriander
8 cups of lettuce--preferably romaine or red leaf
1/3 cup toasted peanuts, coarsely chopped

Instrustions:

1. Finely grate peel of 1 lime and place in measuring cup along with 1/4 cup of lime juice. Whisk in soya/fish sauce, sugar and hot pepper until dissolved.

2. Gradually whisk in peanut oil until blended, add salt and pepper for taste and set aside.

3. Peel mango and cut into thin strips and place in bowl.

4. Seed sweet peppers, cut into strips and add to Mango.

5. Coarsely grate carrot and thinely slice onions and add to bowl along with mint.

6. Toss gently until combined.

7. Place Lettuce and Mango mixture into a big bowl, toss with dressing until mixed. Add nuts and serve.



This is always a great salad...a bit of bite a bit of sweet a whole lot of yummy!

Not a salad, but the perfect dessert for this weather and these recipes:

Lemon Ice

3 cups water
1 cup sugar
.5 cup light corn syrup
3 lemons
2 T white rum (optional)

Substitution: You may replace the corn syrup with an equal amount of sugar; the only impact will be a slightly coarser quality to the ice, which some people like. You may also want to reduce the sugar to taste. I do not know if sugar substitutes will work in this recipe.

Instructions:

Combine sugar and corn syrup in water and stir until completely dissolved in a overable palstic container.

Grate the peel (the yellow portion, not the white pith) off one lemon and stir into the sugar water mixture.

Juice the three lemons, preserving the pulp and stir juice and pulp into the sugar water mixture.

Add 2 T rum if desired and stir in.

After thoroughly mixing the liquid, place the covered plastic container in the freezer. Every hour or so, remove the freezer and stir, mixing the ice crystals around and keeping the pulp from settling to the bottom. After 4-5 hours, leave in freezer overnight to set.

Serve by scraping crystals with a fork into individual bowls.

You may also want to know about a great cookbook, Cool Kitchen by Lauren Chattman, which has 125 (mostly) no cook recipes just for this weather. Focus on cold soups, salads and sandwiches. Very practical and accessible (or adaptable). My copy is hidden in storage somewhere, but I used to make great use of it in Turkey in the summer.

I actually just cruised on over to the Lotte Mart yesterday to buy some salad fixings. They have this kind of lettuce buffet that is quite delightful.

Anyway, I like fruit on my salads so I bought some nectarines and kiwis. Add to this some green onion and grated carrots.

For protein, I either fry up some tofu in a little soy sauce/sesame oil or else I put on some peanuts, walnuts or almonds.

To top it all off, I found some balsamic vinegar and I mix in some olive oil, S and P and it's ready to go.

Yummy.
