My girlfriend and I just got back from Jeju! It was great! Bike riding, the beaches ad we tried scuba diving as well with Big Blue33, the only English speaking shop located in Seogwipo. The weather and water was so clear, we had a fantastic time learning a new sport.

The basic flight from Incheon or Gwangju is around 150,000 to 180,000 won roundtrip. If you want to go cheap there are many yogwans at 20,000 a night in Jeju city or Seogwipo.
We did a lot of scuba diving and brought my car down on the mokpo ferry.
If you want to try scuba diving check out bigblue33.co.kr as they are the only english speaking dive shop on jeju. Owner is German.

This is a motel that I stayed at in Jeju City that I definitely recommend over some of the overpriced shit that I found a bit further towards the airport (ie. manager thought that electrical sockets were all that was needed for high speed internet access in a room):
