I wanted to know if there was any way that I can get my wife and child over here under another visa for spouses and dependents. Actually she is suppose to come in and replace a teacher leaving soon, but it seems she will not be able to do so on time. So maybe i thought she could be covered on another type of visa. and if so possibly teach or will she need her own e2 before she comes to teach?

Your wife and child can receive an F-3 visa (dependent spouse) if you have an E-2 visa. They can apply for it outside of the country of they can come here on a tourist visa and then apply for a change in status once in Korea. However, your wife cannot legally teach on an F-3 visa and will have to do a visa run (I assume) to another country to get an E-2. Depending on your country of origin, she could just come here on a tourist visa and then do the visa run if she will starting within the tourist visa period.
