Can anyone help me out with a recipe for tortillas?
I live in a small town so everything will have to be purchased at E-mart

Ingredients:
3 cups unbleached flour
2 tsp. baking powder
1 tsp. salt
4-6 Tbsp. butter or margarine
about 1 1/4 cups warm water
Mix dry ingredients in a large bowl.
Add margarine.
Use a fork or a pastry cutter to cut in the margarine or just do it the old fashioned way and use your hands.
Next add warm water a little at a time until your dough is soft and not sticky. You do not need very hot water.
Knead the dough for a few minutes.
Now you will pull off pieces of dough to form about 12 small dough balls. Let them rest for at least 10 minutes, longer if you like.
Now you can roll out the dough with your rolling pin. It is a good idea to dust each ball with a little flour just before you roll them out.
Lay your tortilla on the hot frypan. It takes just a few seconds to cook. Flip to the other side. When they are done it should have lots of nice brown speckles. |

What exactly is unbleached flour? I have oftened wondered this as I cook alot but do not do alot of baking.
Is it just standard flour or what? If it is something special does it say UNBLEACHED or something in English on the packaging.
Thanks for the recipe by the way. So I do not have to use vegetable oil or lard?

Any recipes I've used have called for lard, but so have recipes for pie crusts and I just made one this weekend with unsalted butter and it turned out fine. Try that one with butter first, and if it doesn't work then look for lard...
Unbleached flour is simply white flour that hasn't been bleached. It will be a bit less white in colour, but no other difference (beyond the fact that they didn't use bleach in the processing, which many people are opposed to). It's up to you whether you want to use it. Just use the standard all-purpose (it's probably unbleached anyway). |
