Dammit. 20kg sack of expensive brown rice (can't return it, I've had it a month) now has little black imposters crawling around. I thought I was being really careful sealing the bag and rolling it but the little fucks got in somehow. Does this mean they've layn eggs and all? Would you throw it all out or wash it? sigh.[/i]

You don't have to wash it. Bugs and their eggs are good source of protein and vitamin.

Seriously, all you have to do is wash it off with water. You'll notice that they float when you soak the rice in the water. When they float, you just pour the water out and the bugs and their eggs just float away with the water.

Little black, slow-moving bugs, right? Anyone know what they're called? I'm somewhat of an amateur entomologist.

It helps to keep a couple of whole garlic cloves in your rice bag. Change as needed.

For that large a quantity I think you have to wash a few cups at a time by submerging underwater in a big bowl, swishing the rice vigorously with your fingers and decanting each batch at least five-or-six times ...

If you have enough room and some trays I would dry the rice out, pack them in sealed baggies, and maybe store some in the freezer (or get a big "Tupperware" type container ...)

Is it ok to store uncooked rice in the freezer?

I think so. I know that my older relatives (from Armenian descent...) sometimes store rice, bulgur, lentils, etc. in the freezer, and I've done it a few times. I don't think it's really necessary, though, unless they're already bug infested - which indicates that they sat on store shelf too long, giving bugs a chance to penetrate the packaging...
