No Korean restaurants where I live. We only got Mexican a year ago!! I don't even like cooked cabbage (do love it raw and love cole slaw). Guess it is just something else I'll have to try.

I thought it tasted a bit like these when I first tried it (which was on the plane on the way here):



I no longer hold that view, but before you're seasoned kimchi muncher, the taste may seem comparable.

that is what happens I've found too, in the states and in canada...still good..not as good as freshin the market though hey?!

Market Kim Chi is disgusting. You need to get an old women to make it. After school in the Spring and Fall, I would walk past a group of old Ajumas making their kim chi. One day I just sat by and watched for about 30 minutes. Some of the mothers of my students give me homemade. Nothing can compare.

Every time I open the jar now there seems to be a slight pressure release and a couple of bubbles but it is nowhere near as much as the first time and I can't be quite certain that I am not imagining it.
The kim-chi tastes normal, well, as normal as kim-chi gets.
Should I fear the kim-chi?



I am a Korean and living in States, I buy Kimchee at Oriental store here and it happened to me too, NO PROBLEM AT ALL.
When too much Kimchee is in bottle and there is no space between the surface of kimchee and cover of bottle it happens.
Don't worry and enjoy Kimchee !!
