I had read online that in order to get a VISA to S. Korea, that you had to have had possessed a passport for 6 months before you can get a VISA from the Korean Embassy.

I had just applied for my passport, but would that apply to me if I'm going through a recruiter for employment?

I haven't heard that. I do know that your passport can't expire within 6 months of you being here.

Nonsense. When I was due to come here my passport was about 2 months to expiration. I arrived on a brand-spanking new passport.

Me too, but that was 3 years ago; since then lots has changed: medical checks, criminal checks, embassy interviews, etc.
Perhaps this has as well?

LOL... Yeah, I think the OP has it all 'backwards'. Wink
Any county in the word will let you in with a passport that is only minutes old; however, most require a passport expiry date to be, at minimum, six months from the date of entry.

Yes, you have it backwards. The passport should not expire within 6 months. It can be fresh off the press ....

My girlfriend got her first passport weeks before she got her E2. There was zero problem with it.

To be safe, call the nearest consulate and ask this question specifically.
