Is anyone else in Korea making cheese? I'd love to compare notes. Just got my cheese fridge set up, but I still need to get the humidity higher.

I've got a couple goudas in there now, and a leicester ready to go in as well.

I've made a simple goat cheese and another cultured cheese using Kefir that I make daily. I'm thinking about ordering some rennet online and getting into the harder stuff.

What did you use for a cheese press? I've seen simple plans for making them online, but I'm also thinking of checking out the wooden tofu presses that are available here.

Just be aware that grocery store milk usually doesn't work - it's pasteurized at too high of temperature. If you're going to get rennet you'll need some cultures as well. Some low temp meso is a good start.

I've got a 1 kg Kadova cheese mould. Expensive, but very nice. To press I'm just using a 20 liter pot right now. I need to get my press built one of these days.
