Hi,

I like tea brew with cold water?

or

I like tea brewed with cold water?

If the second sentence is correct, please explain why if it is possible.

The second sentence is correct. "brewed with cold water" is an adjective phrase describing "tea". "brewed" can serve as an adjective but 'brew' cannot.

I like tea (that is) brewed with cold water.

my hobby is" tea brewing "or" brewing tea"?

also,"I like to brew the tea ."or "I like to brew teas."?

I thought to brew tea meant to steep tea in hot, usually boiling water. Other than that, I agree with 2006.

As for Kerstin's questions, I think you want to say, "My hobby is brewing tea" or "Brewing tea is one of my hobbies." "I like to brew tea" is also correct.
