Is it possible to write:
Then you may think back to your teenage years as easy-going and fantastic.
(Meaning: In retrospect you might realize how easy-going and fantastic those teenage years were.)

Yes, perfectly fine. You can also "think back on your teenage years as easy-going and fantastic" or "think of / reminisce about / remember your teenage years as easy-going and fantastic."
