Are the following sentences correct?
(1) The pieces of information, or data, that are presented to the machine are called the input.
(2) It is the interaction between people, rather than the events that occur in their lives, that is the main focus of social psychology.
(3) It is a truth universally acknowledged, that a single man in possession of a large fortune must be in want of a wife.
I have learned the relative clause from the grammar book and I have some questions....
The first sentence. Because of the appositive, we can put a comma between data and that?
Are (2)&(3) relative clauses? If not, "that(s)" in the sentence are conjunctions?
When there is a "that" in the sentence(adjective or noun clause), we can not use commas, right?

yes. In fact, it is needed.

A relative clause is a clause that basically modifies a noun. In #2, that refers to a noun clause. Your core sentence is: that is the main focus of social psychology. You can simplify and rewrite the entire sentence as:
The interaction between people is the main focus of social psychology.
#3 is more of a relative clause (that... modifies the predicate nominative truth).

I would say it is a general guideline, not an absolute rule. There are times when you might want a comma just for dramatic pause.
