There were two men with a rose in the hand.

Must it be: in their hands? or is `in the hand�acceptable?

You should say... "Two men, each with a rose in his hand", but Two men with a rose in their hands, is acceptable.

In hand means ready for use if required, so you could say, Two men with roses in hand
