Are these sentences correct:
1-He is a doctor, but you wouldn't think it to look at him.
2-To look at him you wouldn't think it, but he is a doctor.
3-To judge him by his appearance you wouldn't think it, but he is a doctor. |

Yes.
You don't really need him in your third sentence, which could be written
To judge by his appearance you wouldn't think he was a doctor. OR
Jjudging by his appearance...etc.. |
