hm.. i know a saying: "the proof of the pudding is in the eating" which means that you have to try something before you can say if it's good or bad. but i don't know exactly if this has anything to do with this phrase..

The proof of pudding means the ultimate evidence attesting the true nature of something..
For example: The proof of the pudding is in the election results, not the polling.
