cash out=sell asset to profit: to sell off an asset such as land that has been held for a long time in order to make a profit

Could anyone use it in an example?

Thanks

To dispose of a long-held asset for profit, hard-pressed farmers are tempted to cash out by selling their valuable land.

If cash is coming in wouldn't it make more sense to say cash in?

Cash out is mostly used in connection with finance (selling assets for cash) but to cash out is also a slang expression for committing suicide or dying.

Cash out can also be used to indicate that someone has chosen a simpler life style after questioning personal and career satisfaction goals.

She cashed out and moved to New Zealand in order to write her biography.
