A seat is an object you can sit on, for example a chair. A stool is also a seat. |

Chair is more specific than seat; to take a seat just means to sit down. To sit on a chair means to actually use the chair. Generally, most people just say 'have a seat' or 'take a seat' whenever they want you to sit down, no matter what it is. It's just the language.
