Usually you would read it as "Monday through Thursday," although "Monday to Thursday" is also correct. They both really mean Monday, Tuesday, Wednesday, and Thursday, although sometimes people want to make sure to include them all and say, "Monday through Thursday, inclusive." Waste of words.
