For example I say:

1. "Yesterday I read a book" Does it mean that I finished it or not?

2. "Yesterday I was reading a book" And it means that I didn't read it till the end. Right?

3. If I say in general what I did yesterday:
"I watched TV, went for a walk, read (or reading) a book "
What tense should I use?

The past simple tense is used to talk about a finished past action. I think the sentence means that you finished reading the book.

The past progressive tense is used to talk about an action that was in progress in the past. I think the sentence means that you haven't finished reading the book.

What tense should I use?

Use the past simple tense to talk about completed past actions.
'Yesterday I watched TV, went for a walk, and read a book.'
