Camp crafts are crafts you'd do at a camp! Making picture frames out of twigs and branches, making bird-feeders from pine cones, maybe even... I don't know, making a tiny wooden canoe I've never been to summer camp so maybe someone else can chime in with some of their experience of making things at camp.
I think it's usually called 'arts and crafts' (both plural) when you're referring to people (especially children) making things. 'Art and craft' has a much more sombre tone, and refers more to the concept of art and the concept of craft, which are usually on a higher level than people making things for fun I think 'art and crafts' would basically mean the same as 'arts and crafts' - it's the plural crafts that makes it seem less highbrow.
